MIXED BERRY SPOON CAKE AKA THE GREATEST DESSERT IN THE WORLD

I found this recipe last summer in Food & Wine Magazine. This recipe is so simple and so easy you can't go wrong. You will find that this dessert is freakin' delicious and everybody will tell you so. Change it up by adding peaches, apricots or blueberries. Serve it warm with ice cream.  
Filling:
4 pints strawberries (2lbs), hulled & quartered
2 pints blackberries
2 pints raspberries
3/4 cup sugar
2 Tbsps cornstarch
Batter:
1 1/2 cups all-purpose flour
1 cup sugar
2 tsps finely grated lemon zest
1 1/2 tsps baking powder
1 tsp kosher salt
2 eggs
1/2 cup milk
1 tsp pure vanilla extract
1 1/2 sticks unsalted butter, melted

Filling: In a bowl, toss the berries with the sugar & cornstarch, let stand for 10 mins. 
Batter: Preheat oven to 375. In a medium bowl whisk the flour, sugar, lemon zest, baking powder & salt. In a small bowl whisk eggs, milk & vanilla. Whisk the liquid into the dry ingredients until evenly moistened, then whisk in the melted butter until smooth. 
Spread the filling in a 9 by 13 inch baking dish. Spoon the batter on top, leaving gaps. Bake for one hour until the fruit is bubbling and a toothpick inserted into the topping comes out clean. Let cool for about 30 mins or more.
